Crockpot Beef Stew

 Ingredients:

  • 1/4 cup flour (may need more)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon celery salt
  • 2 1/2 pounds stew meat (I prefer the lean stew meat)
  • 3-6 tablespoons olive oil
  • 3 tablespoons cold butter
  • 2 cups yellow onions, diced
  • 4 cloves garlic, minced
  • 1 cup cabernet sauvignon
  • 4 cups beef broth
  • 2 beef bouillon cubes
  • 2 tablespoons worcestershire sauce
  • 3 tablespoons tomato paste
  • 5 medium carrots, cut into 1/4 inch cubes
  • 1 pound baby Yukon gold potatoes, halved or quartered
  • 2 bay leaves
  • 1 cup frozen peas
  • 1/4 cup cold water + 3 tablespoons corn starch
  • 2-3 drops Kitchen Bouquet Browning & Seasoning Sauce
Directions:
  1. Sprinkle meat with black pepper, garlic salt & celery salt. Toss to coat.
  2. Sprinkle flour over the meat and toss again.
  3. Heat 3 teaspoons olive oil in a large skillet over medium-high heat. Add the meat in batches. Don't overcrowd the pan. Brown on each side for 45 seconds. Add more oil if needed. Transfer to crockpot.
  4. Reduce heat to medium and melt 1 tablespoon butter. Add onions and cook for 5 minutes. Add garlic and cook for 1 minute. Use a silicone spatula to clean the bottom of the pan, removing any brown remnants. This will give the soup lots of good flavor. If necessary, add a splash of wine to help loosen it. Transfer the onions/garlic mixture to the crockpot.
  5. Add all remaining ingredients EXCEPT for the peas, cornstarch mixture and 2 tablespoons of cold butter.
  6. Cook on low for 7 1/2 - 8 hours OR high for 3 1/2 - 4 hours, until the vegetables are softened and the potatoes are fork tender.
  7. Add the peas the last 15 minutes of cooking.
  8. To thicken, combine 1/4 cup COLD water with 3 tablespoons of cornstarch. Slowly add it to the stew, stirring to incorporate. It will continue to thicken upon standing.
  9. Turn off the heat. Remove the bay leaves. Swirl in 2 tablespoons of cold butter for a smooth, velvety finish.
  10. Add 2-3 drops Kitchen Bouquet Browning & Seasoning Sauce for an even darker color.

Low Carb White Castle Casserole

This casserole tastes SO MUCH LIKE White Castle burgers! Y-U-M-M-Y!!!


Ingredients:


  • 2 lbs. ground beef

  • 2 packets dry onion soup mix

  • 4 eggs

  • 1 cup mayonnaise

  • 1/2 cup heavy whipping cream

  • 2 cups shredded sharp cheddar cheese

  • ground black pepper to taste

  • Dijon mustard

  • Dill pickle slices


Directions:


  1. Spray 9x13 baking dish with Pam.

  2. Preheat oven to 350°.

  3. Brown ground beef with one packet of dry onion soup mix.

  4. Drain browned ground beef; then add second packet of dry onion soup mix & one cup of shredded sharp cheddar cheese.

  5. Evenly place ground beef mixture in baking dish.

  6. Sprinkle second cup of shredded sharp cheddar cheese evenly on top of ground beef mixture.

  7. Mix eggs, mayonnaise, whipping cream & black pepper together in a bowl.

  8. Evenly pour egg mixture on top of ground beef mixture.

  9. Bake for 30-35 minutes until golden brown.

  10. Top each serving with dijon mustard and a dill pickle slice.

  11. Cut into squares and ENJOY!

Homemade Sloppy Joes

Ingredients:
  • 1 lb. ground beef
  • 1 onion, chopped
  • 1 c. ketchup
  • 1/4 c. brown sugar
  • 1/3 c. water
  • 1 Tbsp. mustard
  • 1 tsp. worcestershire sauce
  • 1 tsp. vinegar
Directions:
  1. Brown ground beef and drain.
  2. Saute' onions in butter.
  3. Add remaining ingredients to onions and bring to a boil.
  4. Add ground beef and simmer 15 minutes.
  5. Serve on hamburger rolls.

John Wayne Casserole

I was SO EXCITED when I found this recipe on Pinterest! Bill loves John Wayne. In fact, he is Papa Dukes to our sweet granddaughter Madeleine. I made this casserole for dinner tonight, and it was a success. So...here it goes...

Ingredients:
  • 2 lbs. ground beef, cooked and drained
  • 1 (1.25 oz.) packet taco seasoning mix
  • 4 oz.mayonnaise
  • 4 oz. sour cream
  • 8 oz. cheddar cheese, shredded and divided
  • 1 yellow onion, sliced
  • 3 Roma tomatoes, sliced
  • 1 green pepper, sliced
  • 4 oz. jalapeno peppers, sliced
  • 2 1/4 c. Bisquick
  • 2/3 c. milk
Directions:
  1. Heat oven to 325 degrees.
  2. Brown ground beef; add taco seasoning and water according to package directions.
  3. Combine mayonnaise, sour cream, 4oz. shredded cheddar, & half of sliced onions in a bowl.
  4. Stir Bisquick and milk together until a soft dough forms. Pat dough on bottom and 1/2" up sides of 9"x13" casserole sprayed with Pam.
  5. Saute remaining onions and green peppers until slightly tender.
  6. Evenly distribute the following ingredients, in this order, atop the dough:
    1. seasoned ground beef
    2. tomato slicess
    3. sauteed onions and pepper
    4. jalapeno peppers
    5. sour cream mixture
    6. remaining shredded cheddar
  7. Bake for 30-40 minutes or until edges of dough are slightly brown.

Best Burger Ever with Secret Sauce

When I found this Best Burger Recipe Ever with Secret Sauce I thought, "Yeah, right. Everybody thinks their burger recipe is the best." I must say I agree with Ashley Lynn Stock on this one! This burger recipe is juicy and delicious! I hope you enjoy this recipe as much as Papa Dukes and I have!

Burger Ingredients:
  • 2 lbs. ground beef 85/15
  • sesame seed buns
  • 1/2 cup of grated Monterrey jack cheese
  • 1/4 cup BBQ sauce
  • season salt to taste
  • cracked black pepper
  • onion powder
 Burger Directions:
  1. Combine the ground beef, grated cheese, bbq sauce, and seasonings.
  2. Shape patties that are about 1 inch thick.
  3. Push a 1/2 inch indent into the center of the patty–this is what prevents the patty from becoming a dome.
  4. Place a thin layer of butter on grill or frying pan.
  5. Cook until done to your likeness.
Special Sauce Ingredients:
  • 1/4 cup + 2 TBSP. of mayo
  • 2 TBSP. ketchup
  • 2 TBSP. sweet pickle relish
  • 1 TBSP. worcestershire
  • seasoned salt
Special Sauce Directions: Combine all ingredients and whisk until well mixed. Taste and adjust ingredients to your liking.

Brush melted butter onto sesame seed buns and sear.
Add burger fixins you like along with hamburger and special sauce.

NOW THIS IS ONE JUICY & TASTY BURGER!!!

Beef Stroganoff


This recipe is an oldie, but goodie! We used to eat this meal with Beth and Aaron's babysitter and family back in the early 1980's. Betty is an excellent cook, and we could always count on her for a delicious meal. I hope you enjoy this recipe as much as we have for many years.

Ingredients:

1 lb. round steak, cubed (I use eye of round.)
1/4 cup chopped onion
2 Tbsp. flour
1 1/2 cups tomato juice
4 oz. can sliced mushrooms
salt & pepper to taste
1 cup sour cream
1 pkg extra wide egg noodles

Directions:
  1. Cut up steak.
  2. Brown steak and onions in small amount of cooking oil.
  3. Stir in flour, salt & pepper.
  4. Add tomato juice and drained mushrooms.
  5. Cover and simmer 1 hour.
  6. Add sour cream.
  7. Heat, but don't allow to boil.
  8. Stir into noodles cooked according to package directions.

Taylor's Favorite Meatloaf






Ingredients:
2 eggs
1/4 cup ketchup
1/4 cup water
medium onion, diced
1 Tablespoon Worcesterhire sauce
1 teaspoon salt
1 cup soft breadcrumbs
2-3 pounds ground beef

Glaze:
1/2 cup ketchup
1/2 cup brown sugar, packed
1 teaspoon mustard

Directions:
1. Preheat oven to 350 degrees.
2. Beat eggs in a large bowl.
3. Blend in ketchup, water, diced onion, Worcestershire sauce and salt.
4. Mix in breadcrumbs.
5. Mix ground beef with other ingredients with a fork.
6. Mold into 8-10 mini loaves.
7. Place on a rack in roaster or cake pan.
8. Cover with foil and bake for about an hour or until juices run clear, and it's no longer pink inside.
9. You may need to drain some of the liquid halfway through cooking time.
10. As soon as loaves are done, remove the foil and coat the top and sides of loaves with glaze.
11. Turn oven to broil. Watch it closely, and broil just until glaze start to bubble.







Best Pot Roast EVER

Ingredients:
1 beef roast, any cut, to fit size of crock pot
1 pkg. Hidden Valley Ranch Dressing mix
1 pkg. brown gravy mix
1 pkg. Italian Dressing mix

Directions:
1. Combine mixes well and sprinkle over roast in pot.
2. Pour water into bottom of pot.
3. Cook on low for 6-7 hours.

Grape Jelly Meatballs

Ingredients:
2 - 12 oz. jars chili sauce
1 - 32 oz. jar grape jelly
1 bag frozen meatballs (about 80 in a bag)

Directions:
1. Put chili sauce and jelly in a pan; heat until jelly isi melted and sauce is smooth, stirring often.
2. Mix frozen meatballs and sauce together; place in crock pot.
3. Cook on low for 5-7 hours or on high for 3-4 hours.

Aunt Betty's Beef Stroganoff

Ingredients:

1 lb. round steak, cubed

1 cup sour cream
1 pkg. wide egg noodles

Directions:

1. In dutch oven, brown round steak and onions in small amount of cooking oil.
2. Stir in flour, salt and pepper.
3. Add tomato juice and drained mushrooms.
4. Cover and simmer 1 hour.
5. Cook egg noodles per package directions.
6. Add sour cream to meat mixture.
7. Stir into drained, cooked noodles.
